Special Greek barbecued Arcadia Saltbush Lamb
1 boned 'butterfly' leg of Arcadia Saltbush Lamb
1 large carton plain yoghurt
As many cloves of garlic as you like
A generous quantity of fresh oregano
juice of 1 lemon
salt and pepper
Method
Chop or crush the garlic into fine pieces, add to other mixed marinade ingredients. Spread marinade mixture generously over lamb, then roll up, tie, and leave as long as you dare in the fridge (overnight is good). Barbecue to perfection, serve in slices with some homemade bread and a fresh green salad.
